Everyone loves chicken nuggets! Especially kids. I haven’t had one in almost 4 years since I changed to a ketogenic lifestyle. This month I’m following carnivore, just to see what effects it will have on me, if any. I’ve been trying to find some new ideas for dinner. My daughter has been making chicken nuggets for her son, so I decided to give that a try!
This recipe is totally carnivore but can be modified to be spicy or to use almond flour instead of the pork rinds and/or Parmesan cheese for the breading. You can also add more spices to make spicy nuggets. This recipe can be made into nuggets or patties. Have a patty on a chaffle bun with mayo, lettuce and tomato. YUM! They’d also be great with a sugar free ketchup, BBQ or mustard sauce for your Super Bowl party. How about a patty with red sauce and mozzarella. Or even just a patty with gravy. Yes! This recipe can be worked into a whole new list of possible recipe ideas. I can’t wait to try them all!
I ground my own chicken for this, but you can buy it in the store already ground. My recipe is based on chicken breast, but adding thigh meat will add to the fat count.

Keto/Carnivore Chicken Nuggets
Enjoy the food that everyone loves in a healthy way!
Ingredients
Chicken Mixture
- 3 lbs ground chicken Or grind your own
- 1 large egg
- 1/2 tsp pink salt
- 1 /2 tsp oregano
Breading Mixture
- 1 cup pork rinds ground
- 1 cup parmesan cheese grated
Instructions

Preheat oven to 400 degrees

Line cookie sheet with parchment paper

Mix ground pork rinds and cheese together in a flat container.

Mix chicken, egg, and spices together.

Form a small patty of desired size, from the chicken mix. Place it on the breading.

Using a fork, cover chicken with mixture.

Place on a parchment lined cookie sheet.

Continue steps 5, 6 and 7 until all chicken has been used. If you run out of breading, simply make more.

Bake at 400 degrees for 20 minutes.
Recipe Notes
Non carnivore options for breading
Use almond flour instead of pork rinds.
2 tsp paprika
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp black pepper
1/2 tsp red pepper flakes.
Place nuggets on a cookie sheet in the freezer for about a half hour, then place in a freezer bag or container to keep for a later date. They can be reheated in the air fryer, microwave or oven.
