Keto “Peanut Butter” Cookies

Are peanuts and peanut butter ok on a keto diet? That all depends on who you ask. I know. That’s not the best answer. Everyone’s body reacts differently to different foods. Peanuts/butter is one of those foods. Peanuts are bad for gut health and are inflammatory. They are technically a legume, so not really the best choice. There are other substitutes that can be used instead that are much better for you. I use almond butter in all of my peanut butter recipes and the taste is not much different! If you are strictly into keto for weight loss and have no other issues, then by all means, have some peanuts. If you have inflammation issues or gut problems, then you’re probably best to stay away from it.

With that being said, these are my version of “peanut butter” cookies made with almond butter. You can sub out the almond butter for another nut butter. You can sub the sweetener to another sweetener, just be sure it’s the equivilant of 1/2 cup sugar. I like to use “>truvia for this recipe, so it’s 1/4 cup truvia = 1/2 cup sugar. Using pure stevia can make these cookies crumbly, so be sure to use a stevia blend (not blended with sugar!)

Almond Butter Cookies

Ingredients

  • 1 cup almond butter
  • 1/4 cup ">truivia Or sweetener that is equal to 1/2 cup sugar
  • 1 large egg

Instructions

  1. Add ingredients to bowl. Mix well. 

  2. Roll into balls (15) 

  3. Place each ball on a silpat mat or parchment paper.

  4. Push down with a fork to make a criss cross pattern on the top of each cookie. 

  5. Bake at 350 for 12-15 minutes until just starting to brown.
