Keto Strawberry Shortbread Cookies
These strawberry shortbread cookies are a great treat for keto and non keto-ers alike!

truvia
Whipped Topping

heavy whipping cream

cream cheese

truvia

Instructions
Cookie
Melt the butter in a sauce pan.
Add flour and truvia. Stir til blended completely.
Form log roll of dough and wrap in wax paper. Refrigerate for 30 minutes.
After 30 minutes open wax paper and slice into 24 cookies.
Place each cookie on silpat or parchment paper.
Bake at 350 degrees for 15 minutes or until slightly browned on edges.
Whipped Topping
Using emulsion blender or mixer, combine heavy cream, cream cheese, vanilla and truvia.
Whip until stiff.
Refrigerate until cookies are cooled.
Cut each strawberry in half.
Place a dollop of whipped cream mixture on each cookie. Place 1/2 of a strawberry on each cookie.
