Zucchini makes a great substitute for apples in a lot of recipes.
Peel zucchini. Scoop seeds out of center and slice like an apple.
In a pot add sliced zucchini, water, lemon juice, truvia, cinnamon, nutmeg, cream of tartar, and butter.
Cook on medium to high heat, stirring occasionally, until zucchini gets soft. I think I cooked it for about 20 minutes. This will depend on how high of a heat you use as well as how big the slices are.
Pour mixture into a casserole dish or 8x8 cake pan.
Preheat oven to 350.
Combine flour, butter, sweetener, baking powder, salt and egg into a bowl. Using a pastry cutter, combine ingredients.
Dough will not be completely incorporated. This will give it a biscuit like texture, which is how we always made cobbler. (for a more cake like topping, use a mixer to blend smooth)
Drop dollops of dough across the top of the filling. (for a smooth topping, spread it across)
Sprinkle one packet of truvia on top of topping.
Bake at 350 degrees for 40-45 minutes or until topping is brown. Serve warm with some whipped heavy cream. Enjoy!
