
This is a light pancake that's great for any breakfast or brunch menu.
Put softened cream cheese and eggs in a bowl. Whip them thoroughly with a whisk.

Add vanilla, cinnamon and truvia. Mix.

Add in almond flour and baking powder. Mix well.
Let batter sit for 5 minutes. While you are waiting, heat greased griddle.
Spoon or pour batter out onto griddle to 4 inch pancakes.

When bubbles appear on pancakes, gently loosen with a spatula and flip.

Cook other side approximately 1-2 additional minutes.
Top with your favorite keto toppings.

Size of pancakes will change macros per cake. Omit one egg for thicker pancakes. That will also change macros.
