Chia Seed Pudding
Chia Seed Pudding is something I had never had before starting the ketogenic way of eating (I will NOT call it a diet 🙂 )
Chia Seeds are an awesome source of Omega 3 fatty acids, antioxidants, calcium, iron and are big in fiber! All good things for the keto way of eating! If you want to read more about how awesome these little seeds are, you can do that here!
There are many many ways to make chia pudding. I am going to give you a basic recipe. From there you can jazz it up any way you want. Cinnamon, blueberries, strawberries, raspberries, chocolate, cacoa nibs, nuts, or maybe a smidge more vanilla and leave it plain.
IngredientsÂ
6 Tbsp Chia Seeds
1/2 tsp vanilla
1 Cup Heavy Cream
1 Cup Almond Milk or Coconut Milk (unsweetened)
Keto approved sweetener to taste (I use 1 packet ofTruvia (not the blend) )
Mix all ingredients together. Stir. Let it sit a few minutes. Seeds will start to plump up. Stir again. Portion out into 4 containers with lids. Refrigerate at least 4 hours. Shake occasionally to mix well. When you are ready to eat one, you can top it however you want. Just be mindful of how many carbs you are adding to it!
