Keto Strawberry Shortbread Cookies

These yummy treats are a combination of two different keto desserts made to look/taste like a non keto treat. My sister makes the sugar cookies in a can, spreads them out onto a pizza stone, covers them with whipped cream and fruit. I knew there had to be a way to make them keto. I was searching on pinterest and found a few different shortbread/sugar cookies and decided to make my own keto version. They turned out pretty tasty so I made them for my daughter’s wedding shower.

 

Keto Strawberry Shortbread Cookies

These strawberry shortbread cookies are a great treat for keto and non keto-ers alike!

Ingredients

Cookie

Whipped Topping

  • 3/4 cup heavy whipping cream
  • 1 oz cream cheese
  • 1 packet truvia
  • 1/2 tsp vanilla
  • 12 strawberries to garnish

Instructions

Cookie

  1. Melt the butter in a sauce pan.
  2. Add flour and truvia. Stir til blended completely.
  3. Form log roll of dough and wrap in wax paper. Refrigerate for 30 minutes.
  4. After 30 minutes open wax paper and slice into 24 cookies.
  5. Place each cookie on silpat or parchment paper.
  6. Bake at 350 degrees for 15 minutes or until slightly browned on edges.

Whipped Topping

  1. Using emulsion blender or mixer, combine heavy cream, cream cheese, vanilla and truvia.
  2. Whip until stiff.
  3. Refrigerate until cookies are cooled.
  4. Cut each strawberry in half.
  5. Place a dollop of whipped cream mixture on each cookie. Place 1/2 of a strawberry on each cookie.
