How can tapioca pudding be keto? Tapioca is not keto! Well, technically you are correct. Tapioca is not. But, chia seeds are! From the first time I’ve had chia seed pudding I thought it kind of tasted like Tapioca pudding. Plus the consistency is the same.
Back when I was a teenager I was a cook at a country inn. I used to make the breads and desserts for the guests. One of the things we made often that I LOVED was tapioca pudding. But, I’m the only one in my home that eats it, so I never make it. Today I was looking for something to experiment with and decided to try to make it Keto.
Our recipe for tapioca pudding made a huge bowl, but I’ve cut the recipe to make 6 small jelly jars about half full. I purchased a set of plastic lids for them so when I make my chia seed pudding I can just pop the lid on and give them a good shake every couple hours.

Keto Tapioca Pudding
A creamy substitute for the traditional tapioca pudding using chia seeds
Ingredients
- 1 cup heavy cream
- 1 cup almond milk unsweetened
- 1/4 cup chia seeds
- 1/4 cup swerve granulated
- 1/8 tsp sea salt
- 2 eggs separated
Instructions

Add all ingredients except egg whites in a sauce pan. Bring to a boil, stirring constantly.

Remove from heat

Whip egg whites until stiff

Slowly combine egg whites to pudding. Fold in gently.

Divide into 6 jars. Refrigerate.

Macros may adjust differently depending on which heavy cream and almond milk you use. These are approximate calculations only.
Great recipe. I added a half teaspoon vanilla to the hot mixture before adding the egg whites.
